Cajun Chicken Pasta

Inspired by our sweet pepper find at Aldi last week, we decided to try cajun chicken pasta this week.  I found this recipe on pinterest and used it for inspiration.  By the way, I've decided to start calling my recipes inspiration instead because I rarely follow them.


 Cajun Chicken Pasta

Pasta (however much you want)
1 lb. chicken, diced
Cajun seasoning
1 red pepper, sliced
1 yellow pepper, sliced
1 onion, sliced
8 oz. mushrooms, sliced
8 oz. cherry tomatoes, halved
1 T minced garlic
3 oz. cream cheese
1 cup milk
1/2 cup parmesan cheese
cracked pepper
green onions

Season the chicken with the cajun seasoning and saute.  Throw peppers, onions, mushrooms, tomatoes, and garlic in a wok. Saute over medium heat.

Combine softened cream cheese and milk in a bowl and set aside.

When chicken is cooked, combine with vegetables. Stir in cream cheese/milk mixture and parmesan cheese.

Serve over cooked pasta and slice green onion on top. Yum!

Again, I love filling pasta dishes with TONS of veggies so I can still get my pasta fix while staying relatively guilt free.
